Sharing a great post: Pea pancakes with salmon fillet, crab and herb crème fraîche

You can use hot-smoked salmon fillets instead of fresh salmon. Make the pancake batter first. Put the defrosted peas in a food processor with the eggs, cream and some seasoning. Pulse-blend to a rough purée (you want some big bits of pea left in). Stir in the flour and melted butter. Set aside.
